Mastering Manual with Capture and Create

If you have always used your camera on its Auto-everything mode but wondered how you could achieve those more artistic effects such as those achieved by other photographers, then “Mastering Manual with Capture and Create” could be the answer you’ve been waiting for. This is a one day workshop in Canterbury that includes a fine dining experience at The Ambrette restaurant and will help you master your camera’s manual mode so that “auto everything” snapping becomes a thing of the past, as you combine creative camera work with super scrummy food on a workshop day that will be both extremely practical for your photography skills and enjoyably yummy too.
Join best-selling photographer Doug Harman and Photographer and renowned Photoshop Artist Sue Chapman ARPS, CPAGB for their day meandering around the wonderful streets and parks of Canterbury whilst experimenting with your camera on it’s Manual mode with some superb food both in the morning and for a wonderful lunch too; you will not go hungry!
This practical day of Photography will both start and end at The Ambrette, but we will spend plenty of time out, using your cameras where you will be ably guided and cajoled by both Doug and Sue. After our lunch, we will have a little time to take a peek at some of your photos, with Doug and Sue providing constructive feedback to help you further improve after your day with them.
With a veritable array of Kentish cosmopolitan life, Canterbury is an ideal location for experimenting with a variety of photographic styles, from architecture and flowers, to street and candid photography.
Both brunch and lunch at The Ambrette are included in the price of this special workshop.
The day starts with a rendezvous at The Ambrette where there’s a chance to savour a very different style of Indian brunch, along with coffee or tea. Then later, after our stroll shooting Canterbury in manual mode, we’ll have stunning Indian lunch too.
The brunch menu is a set menu, but we will ask you to select your lunch menu a few days before the workshop date.
Directions: We suggest you park in one of the city’s park and ride locations then bus into Canterbury. The Ambrette is tucked away in one of Canterbury’s backstreets but is not difficult to find. Check the map here.

The “Mastering Manual” Workshop itinerary comprises the following:
- 0945 – 1000: Arrive at The Ambrette
- 1000 – 1030: Formal meet and welcome with The Ambrette’s very special brunch platter and as much tea and coffee as you wish.
- 1030 – 1100: A short technical overview of how to use your camera in it’s manual mode and the benefits you can expect to achieve; includes covering the differences between aperture and shutter priority and how to use the ISO for lighting control and combining new skills so that you can use your camera in manual mode with confidence.
- 1100 – 1230: Wander around Canterbury in a single group, shooting with a variety of photographic techniques, techniques described in the technical overview (as above). We will attempt to stay in a small group so that Sue and Doug can give you regular guidance, so there’s no need to panic!
- 1230 – 1245: Quick refreshment break.
- 1245 – 1345: More time photographing Canterbury whilst wending our way back to The Ambrette.
- 1345 – 1500: Lunch at The Ambrette (see menu details below which we will ask you to pre-select).
- 1500 – 1600: Time to upload some of your images onto our PC and check through some of your images of the day with useful critique from both Sue and Doug.
- 1600 Goodbyes
This one day workshop caters for beginners or anyone who doesn’t currently use their camera in manual mode or those wanting to learn more about what they can achieve creatively by stepping into “Manual”.
Smoked duck, ham, Cote hill blue cheese, Single Gloucester cheese, grilled courgette, chargrilled artichokes, caramelised red onion chutney, hummus and olives, chicken liver pate, avocado, cucumber, pea shoots, biscuits and homemade flat bread.

DOSAI WITH GENTLY SPICED POTATOES, MUSTARD AND ONIONS
Sambar, coconut chutney.
The dosai is a South Indian crepe and is rich in carbohydrates and proteins.
TENDER BREAST OF POUSSIN MARINATED IN FRESH TURMERIC AND CUMIN
Red radish salad, coriander chutney, mango and red onion salad.
KENTISH MINTED LAMB SAUSAGES
Pickled mango chutney, white kidney beans, rosemary and cinnamon poached peach, baby leaf salad.
STUFFED BUTTERNUT SQUASH, RISOTTO, EXOTIC MUSHROOM, ASPARAGUS, PARMESAN
Cumin spiced lentil and spinach, sauce of yoghurt and green pea.
WILD QUINOA AND SEASONAL VEGETABLES STIR FRY, MUNG LENTIL
Asparagus, crispy okra, crispy onions, paprika fenugreek potatoes, mint and coriander chutney
BAKED AUBERGINE FLAVOURED WITH GARLIC AND RED PEPPER, KENTISH GOATS CHEESE.
Cumin spiced red lentil and spinach, asparagus, sauce of green pea and herbs, paprika fenugreek potatoes, steamed biryani style rice.
TENDER CHICKEN BIRYANI, CORIANDER CHUTNEY.
South Indian style aromatic sauce, paprika fenugreek potatoes, stir fried greens.
Paprika fenugreek potato, biryani rice, seasonal vegetables.
BELLY OF BRITISH PORK, SEASONAL VEGETABLES, PAPRIKA FENUGREEK POTATOES
Biryani rice, crackling, sauce of tomato and ginger.
TILAPIA, LOCALLY GROWN SEA SPINACH AND RED LENTIL.
Paprika potatoes, biryani rice, Kerala coconut sauce. (It is possible that some bones will remain in the fish)

NB: Itinerary is subject to change based on weather and other eventualities outside Capture and Create’s control, but the core workshop content will remain the same. Unless very severe weather warnings are issued we will shoot in sun or rain so please be prepared for wet windy cold weather.
What You Need to bring…
Comfortable walking shoes, a waterproof jacket and outer extremity coverings such as hats and gloves as desired!
- Camera gear and accessories
You will need a camera where you are able to control aperture, shutter speeds, manual and ISO (the sensitivity). It does not need to be an SLR however.
Lens suggestions for those with SLR’s: Anything you have in the region of around 10 – 200mm whether it be a wide angle 10 -22mm, a prime 50mm or 100mm macro, a 28 – 70MM zoom, or 70 – 210MM or anything similar. Not recommended – a fish eye or long telephoto lenses.
- A reasonable capacity memory card, such as 8GB – or higher – compatible with your camera.
- If you have a selection of lenses as suggested above feel free to bring a selection, but remember you will be carrying them around with you!
- A tripod is not required
